Beets clean, put it in a pot of water with vinegar or lemon juice, boil until tender (20 minutes). Broth strain and put to cool, remove the beets and grate. Sorrel chop, cucumber, egg and greens cut all shift into a chilled beet broth, let stand for half an hour and serve with sour cream and horseradish. Optionally, you can add to the soup boiled beef, salt and pepper to taste.
