This is good rice pudding and a dessert and as a main dish, if you cook it with whole grain substitute milk and sweeten minimum. Reduce the cooking time, cook rice in advance, or take two cups of cooked brown rice, cooked before. How to prepare:
In a large saucepan combine rice with water and bring to a boil. Reduce heat, cover and simmer for 45-50 minutes (depending on the type of rice). Remove from heat and let sit for 10 minutes under the lid.
While the rice is cooked, combine in a bowl cardamom, cinnamon, raisins and almonds (if using). In blender, combine milk, dates and vanilla. eat more dates, get the sweeter pudding.
Add the wet mixture into the bowl with the dry ingredients and combine. Transfer the weight of the pot with boiled brown rice, stir well and cook over moderately low heat for 10 minutes, to taste intermingled.
Serve warm or cold dessert bowls. Garnish with a pinch of finely chopped almonds or almond petals (if using).
