1. Put the sausage in the water and pour the boiling water. Reduce heat and simmer until tender. Drain sausage and when they are sufficiently cooled down, if you like, peel and finely chop.
2. Heat the oil in a large saucepan over medium heat, saute the onions, leeks and carrots for 3-4 minutes, stirring frequently, until onion is softened.
3. Add the tomatoes, cabbage, garlic, thyme, broth and sausage. Bring to a boil, reduce heat and cook on low heat for about 40 minutes, until the vegetables are soft.

If you do not have ready fresh broth, use water. It can be dissolved in water 1 bouillon cube. Add a little onion and garlic plus a bouquet garni (remove before feeding).
