This hearty salad is quite replace your lunch or dinner.
1. In a large skillet heat the oil and fry the onions until golden brown.
2. Squeeze the zucchini and add to pan with onions. Fry over medium heat 20 minutes, stirring occasionally.
3. Season with salt and pepper, stir and let cool
4. Add the garlic, hard-boiled eggs, mayonnaise and dill. Serve chilled.
You can submit a salad with fresh bread, with croutons or used as a filling for pita. Very tasty!
