Peel the ginger from the skin and rub on a very fine grater. Cut into thin strips of lemon and orange peel, mix in a three-liter saucepan with the sugar and grated ginger, cover with water and simmer to a boil, then immediately remove from heat, cover and cool at room temperature.
When the mixture has cooled, strain it through a double layer of cheesecloth, add the orange and lemon juice, mix well and pour into a jar, put in the fridge to cool. Serve in a tall glass and garnish with a thin slice of orange.
