To clean peeled tomatoes, make a small incision at the base and put them in a colander. Bring to a boil a pot of water and prepare a bowl of ice water. Dip the colander with tomatoes in boiling water until the skins will burst, 7-10 seconds, depending on ripeness. Immediately get colander and dip it in cold water.
