Mini carrots baked with thyme

Ingredients

  • Carrots (mini) — 500 g
  • onion (medium, cut into slices) — 1 onion
  • Garlic — 2-3 cloves
  • Olive oil — 1 tbsp.
  • Wine vinegar (white) — 2 tsp.
  • Thyme (fresh or dried) — 1 hour. l.
  • salt — to taste

  • Description

    1. Preheat oven to 220 — 230 degrees.

    2. Defrosted carrots and garlic and onions to put in a refractory form, sprinkle with olive oil, sprinkle with wine or vinegar, sprinkle with thyme, salt and pepper. Stir by hand.

    3. Cover the form of a sheet of foil, place in oven for 20 minutes. Remove foil and continue to stir bake another 15 — 20 minutes (stir again after 7-10 minutes).

    For baked carrots, you can use a variety of herbs instead of thyme — rosemary, thyme. Garlic cloves can be baked whole, and can be finely chop. Carrots do not get softened and lightly crunched, and a bit like pickled. Serve it can both heat and cooling instead of a side dish or as an appetizer, antipasti. If you like soft carrots, increase the cooking time.
