Beetroot salad with apples and cheese

Ingredients

  • Beets (small) — 8
  • red onion (small) — 3 pcs
  • Apple (green) — 4 pcs
  • The nuts (pecans or walnuts)
  • blue cheese (or goat)
  • Lemon (juice) — 1 tbsp.
  • Salad red
  • Sour — 1/2 pack
  • Vegetable oil, refined,
  • Balsamic vinegar
  • salt
  • Pepper
  • Features

  • Description

    Preheat the oven, beets, wash and dry, wrap in foil with onion (it should not be cleaned) and bake in the oven for about an hour (using vegetables about the same size), checking the readiness of a fork or a knife (beets should be soft at the puncture). Remove from oven, cool vegetables, peel, cut along the thin slices. Transfer to a bowl. Apple peel and cut into thin slices, put in a salad. Add nuts (walnuts or pecans), crumble the cheese, sprinkle with lemon juice. Season with salt and pepper.

    For the filling can also use a mixture of balsamic with oil or low-fat sour cream. Salad arrange on plates on lettuce leaves and serve.
