Chocolate - Cognac mousse with cream cheese and spicy berries

At Christmas, I wanted to please my family spicy, sweet and a little winter dessert. Recipe shared Natasha Ruletka site chef, for which she thanks a lot. Chocolate mousse was very airy and spicy, with a tender cheese cream with white chocolate and strawberry dessert gives the unforgettable pleasure. It is best to use a cherry, it goes well with spices and red wine, and has not so intense taste like strawberries. Strawberry is also very tasty, but I think that with cherries get the perfect combination. Merry Christmas! :)

I got mousse into 4 martini glasses and 2 cups.


Ingredients

  • Chocolate mousse:
  • An egg white (about 2 eggs) — 65 g
  • Sugar — 70 g
  • Water — 30 g
  • Cream 10% — 70 g
  • Dark chocolate — 100 g
  • Gelatin — 4 g
  • Cognac — 1. 5 tablespoons
  • Green Cardamom — 3 capsules
  • Cheese Cream:
  • Cheese Cheese — 150 g
  • White chocolate — 30 g
  • Cream 10% — 30 g
  • Spicy berries:
  • Sherry (or dry red wine) — 350 g
  • Berries seedless (preferably cherry or strawberry) — 250 g
  • Sugar — 100 g
  • zest of half a lemon
  • Cinnamon — 1 stick
  • Star anise — 1 star
  • Carnation — 3 bud
  • For the decor:
  • Dark chocolate — 30 g
  • Note

  • 1. Cardamom capsules and cleaned from the seeds in a mortar and grind to a fine powder. Gelatin pour 3 tablespoons of cold boiled water and leave to swell for 30 minutes. In saucepan, combine the water, sugar and ground cardamom syrup and boiled to 115 degrees over low heat, sugar should be completely dissolved. Chilled whites whipped fluffy foam with a pinch of salt on medium speed. Carefully pour them in a boiling syrup in a thin stream, whisking continuing mixer. Beat until the mass until it has cooled to room temperature and becomes stable and shiny. Gelatin is heated in a water bath until homogeneous, cooled to room temperature and mix it with 3 tablespoons of beaten egg whites. Then combined with a total weight with a spatula.
  • 2. Chocolate break into small pieces and melt the cream together with a water bath, then cooled to room temperature and mixed with brandy. Mix 5 tablespoons of beaten egg whites with chocolate and mixed with the rest of the proteins shovel.
  • 3. Spread mousse into glasses and send them in a cool place for 3 hours.
  • 4. To prepare the cream cheese, we melt the chocolate and cream in a water bath and cool to room temperature. Combine cream cheese with chocolate, stir electric mixer until fluffy.
  • 5. endured the cold for 1 hour. Now we prepare spicy berries. To do this, remove the lemon zest half. In a skillet, mix Sherry, spices, sugar and zest. We bring mixture to a boil and add the berries. On low heat cook the berries for 3 minutes, then cool for syrup with berries.
  • 6. When the berries are cool, fold them into a sieve. Confectionery syringe or bag fill with cream cheese mousse and decorate them. On cream spread berries and pour them with melted chocolate (30 g for decoration).
