Dessert «Bavareze with strawberries»

This most gentle air dessert was invented in France, it is very popular in Italy, almost the same as the panna cotta or tiramisu. In the classic version Bavareze prepare custard, to which is added the whipped cream and vanilla. The thickener may be added to gelatin, but not necessarily. I found this recipe from Mary DolceVita now preparing to home. Mary, thank you! Dessert turns sweeping, very gentle, air and melting in the mouth:).


Ingredients

  • Strawberry — 500 g
  • Cream (33%) — 250 g
  • Sugar — 150 g
  • Milk — 250 ml
  • Gelatin — 12 g
  • Powdered sugar — 80 — 100 g
  • Juice and zest of half a lemon
  • Note

  • 1. Gelatine soaked in cold boiled water for 15 minutes. Strawberries ground in a blender with the sugar and lemon juice.
  • 2. Milk with lemon zest warming up (but do not boil) and filter, fully removing the peel. Add the gelatin and the milk is stirred until complete dissolution. Cream whisk until soft peaks at the lowest speed, gradually add powdered sugar.
  • 3. Milk gelatin mix with strawberry puree and mix thoroughly.
  • 4. Add the whipped cream into the mixture and mix again. Form lightly moistened with cold water, fill with cream — strawberry weight, cover the surface with cling film and send in the refrigerator until completely freezing (preferably overnight). To remove the dessert from the mold, you can omit it briefly in hot water and gently invert onto a plate, or hold a knife around the edge of the silicone mold and a little shake.
