Eclairs with custard and cherry

I really like eclairs with custard, but after a bad experience as a child, choux pastry scared me :). Recently, I took a chance and realized that it was very easy and pretty fast and since I suffered trying new recipes with choux pastry. In this recipe, I collected everything that I love — the custard with a hint of citrus and cherry. I was very pleased with the results, I recommend to cook:).


Ingredients

  • Choux pastry:
  • Egg chicken — 4
  • The water — 1 tbsp.
  • Butter — 100 g
  • Flour — 1 cup
  • Salt — a pinch
  • Custard:
  • Egg yolk — 5
  • Sugar — 1 cup
  • Milk — 1 cup
  • vanilla — to taste
  • Starch — 2 tablespoons
  • Butter — 200 g
  • Cherries (pitted) — 100 g
  • zest of half an orange
  • Note

  • 1. To prepare the custard dough in a pan melt the butter with water and a pinch of salt. Then quickly Pour all the flour and mix with a spatula pastry, warm up for 1 minute and remove from heat. We reserve the dough for 10 minutes to cool, then, whisking constantly, one is driven into the egg batter. Only when the egg is completely mixed into the test drive next. The dough must acquire a silky, smooth, uniform consistency.

Immediately remove from heat and cool for fully. If the cream has turned lumps, it can be beat with a mixer. In the cooled cream add chopped into pieces of butter and whisk with a mixer until smooth. Add the orange zest and stir gently.
  • 4. eclairs carefully cut from the side, gently fill with cream with a spoon or pastry bag. Inside put a couple of cherries. The surface of the cover ?clairs with chocolate or melted chocolate. Before serving eclairs need to cool in the refrigerator. Bon Appetit!
