Donuts choux pastry with berry jam

Today, I come to you with a recipe of delicious, air donuts. This recipe is unique in that the donuts are made with choux pastry, not from yeast or cottage cheese, as we used to. Donuts get a blank inside and very tasty, especially with berry jam. If you have no desire to cook it, it can be done — simple — to roll the donuts in powdered sugar mixed with cinnamon and orange peel.


Ingredients

  • 4 eggs
  • 250 ml of water
  • 125 g butter
  • zest of half a lemon
  • oil for frying
  • 125 g flour
  • 0,5 teaspoons of sugar
  • 1 \ 3 teaspoons salt
  • berry jam:
  • 400 g berries (my blackberry)
  • 200 g sugar
  • 1 tablespoons balsamic vinegar
  • Note

  • 1. To make jam my berries, mix it with sugar in a saucepan and put on fire. Cook, stirring, until sugar is dissolved. Adding bite and cook over low heat 10 minutes, stirring occasionally. Remove from heat and allowed to cool.
  • 2. To prepare the dough in the pan, mix the water, butter, sugar, salt and zest.
  • 3. When the butter is melted, remove from heat, add the flour and mix with a spatula. Return the dough to the board and, stirring constantly, warm up the dough for 2 — minutes.
  • 4. Remove from the heat, begin to enter the eggs one by one, each time after conducting careful whisking. The dough should be smooth, but not liquid, so that if the eggs are large, you may need less. Last egg can add parts to achieve the desired consistency. In a deep pot warm up the oil. Check the oil temperature can be lowered to a wooden stick or toothpick. If it went by the bubbles, then you can fry. Moistened with water by hand or with the help of a teaspoon of forming small balls of dough and place it in oil. Fry each portion of about 3 — minutes. Do not forget that the balls will increase in the volume of 4 times, do not put too much at once. Ready donuts put on a napkin to soak excess fat. Serve with berry sauce. Bon Appetit!
