Florentine rice cake by Jamie Oliver

This recipe is taken from the book Jamie Oliver’s «My Italy». The taste resembles the English cake rice pudding, it is incredibly fragrant blend of vanilla and orange just wonderful. Jamie recommends feeding cake hot and I agree with him, so the cake contrasts beautifully with cold ice cream or fresh cream.


Ingredients

  • Dough:
  • 120 g butter
  • 250 g flour
  • 100 g of powdered sugar
  • 1 pinch of salt
  • 1 vanilla pod — on — request
  • Lemon Zest 0.5
  • 2 large egg yolks
  • 2 tablespoons of cold water or milk
  • Filling:
  • 300 g rice for risotto
  • 2 vanilla pod
  • 3 tablespoons sugar (I advise Take 4 tablespoons)
  • 50 g butter
  • Zest 3 — oranges
  • 1 glass of white wine
  • 1 liter of whole milk
  • 2 large eggs
  • 2 tbsp. l. powdered sugar
  • Note

  • 1. To prepare the dough grind into flour butter, flour, powdered sugar, salt, vanilla, zest and egg yolks in a blender or by hand. When the mixture becomes like the bread crumbs, pour the milk and form a dough ball. We put the dough in a greased with butter form and recovering in the freezer for 1 hour.
  • 2. In the meantime, you can prepare the stuffing. In a saucepan with a thick bottom melt the butter. Incised vanilla pods in half and take out the seeds and add them to the butter and stir. Warms on low heat for 1 minute, then Pour rice with sugar and orange zest. Increase the heat and pour in the wine. Stirring constantly, waiting for the smell of alcohol is completely gone.
  • 3. Gradually pour in the milk, cook over medium heat for 15 minutes. Give the rice to cool, then add the eggs and stir. In a preheated 180 degree oven send the form with the dough for 12 minutes. On the basis of baked pour a mixture of rice, sprinkle cake with powdered sugar. Then increase the temperature to 200 degrees and bake 20 minutes until golden brown. Serve the cake with cream can be fresh or ice cream, sprinkled a little zest.
