Vegetable salad with a sweet ginger dressing

Ingredients

  • Lemon — 3 pieces
  • Garlic — 1 clove
  • Ginger (length 2.5 cm) — 1 piece
  • Honey — 2 tsp.
  • Sugar — 1 tsp.
  • Olive oil — 5 tbsp.
  • Bulgarian pepper (red) — 1 pc
  • Bean sprouts — 100g
  • savoy cabbage — 0,25 cabbages
  • Beetroot (raw) — 1 pc
  • Cucumbers — 0.5 pc
  • Carrots — 1 pc
  • Peanuts — 100g

  • Description

    It is extremely gentle and refreshing salad.

    Carefully cut the zest of lemons with a sharp knife and cut the peel with white flesh. Cut the lemons in half and squeeze out the juice. Put the juice, zest, garlic, ginger, honey and sugar in a saucepan, bring to a boil and cook for 4-5 minutes until it boiled down to half. Season with salt and pepper and allow to cool, pass through a sieve into a bowl. Whisk whisking, add the olive oil.

    Put all the vegetables in a bowl and mix. Pour the sauce, stir and chop chopped peanuts.
