Cabbage soup with sausage

Ingredients

  • Sausages (low-fat, you can substitute sausages with spices) — 350 g
  • Vegetable oil, refined — 2 tsp.
  • Onions ( finely chopped) — 1 onion
  • leek (sliced ??in half and finely chopped) — 1 pc
  • Carrots (chopped in half and chopped) — 2 pcs
  • Tomatoes canned (in juice, chopped) — 400g
  • white cabbage (herb stalk cut and shred) — 350 g
  • Garlic (chopped) — 1-2 clove
  • Thyme (dried) — 1 pinch
  • The broth (chicken or beef) — 1,5 l
  • salt
  • Pepper
  • Parmesan cheese (grated)

    Acute or smoked sausage make this soup is satisfying. He will make a hearty and warming dinner if served with crusty bread and a green salad.

    1. Put the sausage in the water and pour the boiling water. Reduce heat and simmer until tender. Drain sausage and when they are sufficiently cooled down, if you like, peel and finely chop.

    2. Heat the oil in a large saucepan over medium heat, saute the onions, leeks and carrots for 3-4 minutes, stirring frequently, until onion is softened.

    3. Add the tomatoes, cabbage, garlic, thyme, broth and sausage. Bring to a boil, reduce heat and cook on low heat for about 40 minutes, until the vegetables are soft.

    4. Season with salt and pepper, if needed. Pour into warm bowls and serve with Parmesan cheese.

    Note

    If you do not have ready fresh broth, use water. It can be dissolved in water 1 bouillon cube. Add a little onion and garlic plus a bouquet garni (remove before feeding).
