Potato soup with pesto

Ingredients

  • Bacon smoked (without crust, cut into pieces) — 3 piece
  • Potatoes — 450 g
  • onion — 450 g
  • Olive oil — 2 tbsp.
  • Butter — 25 g
  • Chicken broth — 600 ml
  • Milk — 600 ml
  • Macaroni (in the form of shells) — 100 g
  • The cream (fat) — 150 ml
  • Parsley (fresh chopped)
  • salt
  • Pepper
  • Parmesan cheese (grated)
  • garlic bread

  • Description

    If you can buy or make fresh pesto, it will be very different from the one you can buy canned banks. Keep fresh pesto in the refrigerator.

    1. To make the sauce, put all the ingredients in a blender or food processor and chop 2 minutes, or grind in a mortar.

    2. Finely chop the bacon, potatoes and onions. Fry the onion in a large saucepan over medium heat for 4 minutes. Add butter, potatoes and onions, and cook 12 minutes, stirring constantly.

    3. Add to the pot broth and milk, bring to a boil and cook for 10 minutes. Add the pasta and cook for 10-12 minutes.

    4. Add the cream and cook for 5 minutes. Add parsley, salt and pepper, 2 tablespoons of pesto sauce. Pour the soup into bowls and serve with parmesan and garlic bread.
