Pastine Brody (soup with pasta in Italian)

Ingredients

  • Chicken broth (very high quality) — 250 ml
  • Tomatoes (small) — 2 pcs
  • Macaroni Stellini (or broken vermicelli) — 1 tbsp.
  • salt
  • Parmesan cheese (grated)
  • Basil (chopped) — 1 pinch
  • Features

  • Description

    1. Pour the broth in a saucepan and bring to a boil while you prepare the tomatoes. Make an incision from the bottom and pour boiling water. Leave for a moment, and then peel. Cut into quarters, cut the seeds and finely chop. Put shredded tomatoes in warmed soup plates.

    2. Add noodles to boiling broth, and season with salt, if needed. Cook 3 minutes until cooked al dente. Meanwhile, put the basil in a soup plate. Pour on top of the hot broth with pasta and serve with Parmesan cheese.
