Chinese chicken soup with corn

Ingredients

  • Chicken breast (pitted, cut into strips) — 450 g
  • Chicken broth — 1.2 L
  • Double Cream — 150 ml
  • Vermicelli — 100 g
  • Potato starch — 1 tbsp.
  • Milk — 3 tbsp.
  • Corn — 175 g
  • salt
  • Pepper
  • green onions (the pen) (chopped)

    1. Put the chicken in a pot, chicken broth and cream, bring to a boil over low heat. Reduce the heat and simmer for about 20 minutes. Season with salt and pepper to taste.

    2. Meanwhile, boil the pasta in a separate pan of boiling water for 10-12 minutes, drain.

    3. In a small bowl mix the starch and milk to a smooth paste. Add the pasta to the soup and simmer until it thickens.

    4. Add corn and noodles, warm. Pour into bowls and garnish with green onions and serve.
