1. Heat the oil in a large skillet. Add to hot oil, onions, potatoes, carrots and leeks, fry, stirring often, for 2 minutes, until the vegetables are soft.

4. Bring to a boil, reduce heat and simmer 20 minutes, until the vegetables are soft.
5. Add the beans, season with salt and pepper and cook, stirring occasionally, for 10 minutes.
6. Pour the soup into warm soup tureen and pour into bowls and serve garnished with cilantro.
