Cool refreshing summer soup.
1. Cut the melon in half and cleaned of seeds. With a round spoon cut out 24 melon balls and set aside for decoration. The remaining pulp shift in blender or food processor.
2. In a saucepan, combine sugar, water and lime zest. Stir over low heat until sugar dissolves, then boil for 2-3 minutes, remove from heat and let cool slightly. Half syrup poured into Harvester to the melon and make a homogeneous puree, adding the remaining syrup and lime juice to taste.
3. Pour the mixture into a bowl, add the basil and cool. Serve and garnish with basil leaves and dynnymi balls.
Note:
Add the sugar syrup in 2 stages, as the quantity of sugar depending on the sweetness of melon.
