Pea pods with yellow pepper

Ingredients

  • Olive oil (or vegetable) — 1 tbsp +2 Tsp
  • Bulgarian pepper (yellow, large, core and seeds removed, cut into pieces 2-5 cm) — 1 pc
  • Celery (large, cut diagonally into slices 5 mm thick) — 2 pcs
  • salt
  • Pepper (black, rough grinding)
  • Green Peas pods (diabetes or ‘Mangin, the’ hard fibers remove) — 450 g
  • Features

  • Description

    1. On medium heat, heat 1 tbsp. a spoonful of oil in a frying pan with non-stick coating 30 cm. Add the yellow pepper, celery, 3/4 tsp. salt 1/4 teaspoon ground black pepper and cook, stirring frequently, about 10 minutes, until the vegetables are golden. Put in a bowl.

    2. Heat the remaining 2 teaspoons of oil in the same pan. Add sugar pea pods 1/2 tsp. Salt 1/4 teaspoon ground black pepper and cook, stirring frequently, about 4 minutes, until peas are tender-crisp. Add pepper mixture and mix thoroughly.

    3. Put vegetable mixture on a plate. If you are not going to serve the dish immediately, cover and refrigerate to serve later in the cold.

    Note

    In order to prepare the Mangin-podded peas and sugar to cook, first thoroughly rinse the peas. To remove the hard fibers pull the tip of the follicle, preventing the fiber break. Pull down the entire length of the pod. In the sugar snow peas fibers run along both sides of the pod.
