Spiced Dhal soup with carrots

Ingredients

  • red lentils — 125 g
  • Vegetable Broth — 1.2 L
  • carrots (peeled and chopped) — 350g
  • onion (peeled and chopped) — 2 onions
  • Canned tomatoes (chopped) — 250g
  • Garlic (peeled and chopped) — 2 cloves
  • Refined vegetable oil — 2 tbsp.
  • Ground cumin — 1 tsp.
  • Coriander (ground) — 1 tsp.
  • Chile (seeded and chopped) — 1 pc
  • Turmeric — 1/2 tsp.
  • Lemon juice — 1 tbsp.
  • Salt
  • Milk — 300 ml
  • Coriander (chopped) — 2 tbsp.

  • Description

    In this delightful, warming, nourishing soup spices are added to give it a special urgency and appeal. It is quite easy to prepare and very tasty.

    1. Put the lentils in a sieve and rinse under cold running water. Drain and place in a large saucepan with 850 ml of vegetable broth, carrots, onions, tomatoes and garlic. Bring to a boil, reduce heat and simmer for 30 minutes

    2. Meanwhile, heat the oil in a small saucepan, add spices and fry for 1 minute on low heat.

    3. Remove from heat and add lemon juice and salt to taste.

    4. Whisk the soup portions in a blender or food processor. Return the soup to the pot and add the spices, the remaining 300 ml of broth or water and cook for 10 minutes

    5. Add the milk to the soup and season to taste. Add coriander, reheat over low heat. Serve hot with a dollop of sour cream.
