Pumpkin soup

Ingredients

  • The pumpkin (or squash) — 800 g
  • Olive oil — 1 tbsp.
  • onion (finely chopped) — 1 onion
  • Vegetable Broth (hot) — 1.5 l
  • Bay leaf — 1 pc
  • Features

  • Description

    On Halloween this soup can be served in a pumpkin.

    1. Cut the pumpkin in half, clean out the seeds, then cut the cake. Cut the flesh into pieces. (If you are going to submit the soup in a pumpkin, cut off the top and scrape out the seeds and pulp of it).

    2. Heat the oil in a pan and fry the onion for 10 minutes until soft. Add the pumpkin and cook for 3 minutes.

    3. Add the broth and bay leaf and bring to a boil. Cook for 20 minutes until the pumpkin is tender. Take the bay leaf and discard, whisk the soup in a blender or food processor in batches.

    4. Return the soup to a clean pan, heat and check seasoning. Add a little more stock or water if it is too thick, served with muffins.
