Trout with fried ham, pancetta and red chicory

Ingredients

  • chicory (Radicchio cultivar) — 1 bunch
  • Olive oil — 3 tbsp.
  • Apple vinegar — 2 tablespoons
  • Pancetta (jerked pork belly) — 100 g
  • Watercress — 1/2 beam
  • trout (smoked fillets) — 1 pc
  • Almonds (peeled, roasted) — 30 g
