White bean tagine with olives

Ingredients

  • White beans (soaked overnight) — 115 g
  • Olive oil — 2-3 tbsp.
  • onion (finely chopped ) — 1 onion
  • Garlic (crushed) — 2-3 cloves
  • Ginger (peeled and chopped) — 25 g
  • Saffron — 1 pinch
  • Cherry tomatoes — 16 pcs
  • The sugar — 1 pinch
  • Olives (black, pitted) — 1 handful
  • Cinnamon (ground) — 1 tsp.
  • pepper-paprika — 1 tsp.

  • Description

    This stew of white beans can be served with roasted meat, roast beef or fish. However, it is quite satisfying to apply it and as a separate dish — with a green salad and fresh crusty bread.

    The bean dishes are often added to sausages, for example, the sharp little Chorizo: if you add to it a little bow, it will give a special flavor throughout the dish.

    1. Rinse the beans and place in a large pot with plenty of water. Bring to a boil and boil for about 10 minutes. Then lower the fire, simmer for 1-1 1/2 hours until tender. Drain the beans and rinse under cold water.

    2. Heat the olive oil in a pan with a thick bottom. Add the onion, garlic and ginger and cook for about 10 minutes, until tender. Add the saffron, then tomatoes and sugar.

    3. When the tomatoes are soft, add the beans. As warm as the tomatoes, add the olives, cinnamon and paprika. Season with salt and pepper, sprinkle with parsley and serve.

    Note

    If you hurry, you can use 400g canned white beans. Wash it thoroughly, as sometimes Canned beans can be very salty.
