Meringue lemon and passion fruit

Ingredients

  • The dough is flaky (10 x 10 cm) — 16 sheets
  • Butter (melted) — 35 g
  • For cream

  • Butter — 90 g
  • The lemon (peeled) — 1 pc
  • Passion Fruit — 2 Pieces
  • Sugar — 250 g
  • Eggs — 3 pcs
  • Eggs (protein) — 2 pcs
  • Powdered sugar — 150 g

  • Description

    Preheat oven to 180 C. Now spread sheets of dough with melted butter, place 2 sheets of dough on each other and cut using espresso cups, dough circles. Put in the oven for 5 minutes, it becomes crispy and light brown.

    To prepare the cream, clean lemon peel cut into thin strips. Place the peel for a while in a bowl of water. Squeeze the juice from the lemon and mix it with passion fruit pulp. Then add the sugar, butter and eggs and warm water bath. Stir give weight to thicken for 10 minutes, then remove from heat and cool.

    Beat the egg whites with sugar. Preheat the oven to grill mode. Fill the molds from the test cream, put a layer of whipped egg white. Leave in the oven for 2 minutes until golden brown. Before serving, garnish with shavings of lemon peel.
