Cake with prunes from Alexander Seleznev

Ingredients

  • Prunes — 300g
  • Cognac — 125 g
  • Butter — 150 g
  • Sugar — 150 g
  • salt — 1 pinch
  • The egg yolk — 4 piece
  • Egg white — 4 pieces
  • Walnut — 100 g
  • Baking powder — 1 tsp.
  • Wheat flour — 125 g
  • whipped cream — 500 g
  • For sugar paste

  • Powdered sugar — 1 kg
  • Gelatin — 12 g
  • Water — 110 g
  • Lemon juice — 10 g
  • For protein cream

  • Egg whites — 100 g
  • Powdered sugar — 1 kg
  • Lemon juice — a few drops

  • Description

    Prunes soaked in brandy for 30 minutes, then grind in a blender. Butter, sugar and salt, beat to a magnificent mass, add the egg yolks with walnuts and flour with baking powder. Enter chopped prunes and whipped protein. Bake in a circular shape at a temperature of 180 C for 30 minutes. Cut the finished cake into two parts, to smear whipped cream inside and outside. Cake are covered with sugar paste, protein cream and decorate with fresh flowers. Similarly prepare the other two tiers.

    Protein Cream:Beat the egg whites with the sugar and lemon juice in a thick foam. Fill cream culinary syringe or paper kornetik.
