Carrot Cake with curd cream

I recently wanted to carrot cake, and I decided that — something to improvise :). For a basis took a carrot cake that I had prepared for the carrot cake with orange cream and cream cheese made since my husband loves it :). The stuffing added blueberries and red currant cake turned out, my wishes are fully satisfied at the moment :). Ingredients

  • Dough:
  • 300 g carrots
  • 3 eggs
  • 170 g sugar
  • 180 g flour
  • 2 hours. l. baking powder
  • 100 g butter (melted)
  • 80 g of any chopped nuts
  • Cream:
  • 400 g sour cream or cream 33%
  • 250 g of cottage cheese
  • vanilla sugar — to taste
  • 200 grams of any berries
  • Note

  • 1. whisk eggs with sugar in a lush white foam. Add the cooled butter and grated carrot on a fine grater, mix thoroughly. Sift flour with baking powder and stir into the mixture, add the nuts.
  • 2. We shift the dough in a greased with butter form and send in a preheated 180 degree oven for 30 — 40 minutes. Cavity Let cool the cake and cut it into 2 parts horizontally. For the cream, beat the cream to soft peaks, add the cheese and sugar. On the bottom half of the cake spread the cream, cover the second Korzh, sides and top of cake and smeared with cream.
